Gensaka Brewery is one of the few sake brewers that produce their own rice. For this sake they only use Isenishiki rice, unique to their region. This Junmai Daiginjo, Ryuou Yamadanishiki, also known as Blue is made with rice produced by the local land and people, flavored by the local water and climate, the taste of this sake is nothing other than the terroir of Ryuou. The nose is a mild collection of vanilla, rice, young peach and pear aromas. A medium body, velvet texture, that is fruity with lots of umami and a quick finish.

This ōkarakuchi (literally ‘big dry mouth’) organic sake from the brewery Akishika Shuzō is one of the most dry sake available in Japan. This brewery produces their own rice.
The Macho Series are all made using the traditional Kimoto style and ambient yeast from the brewery. These are powerful and rich, natural sake. To showcase the taste of the rice fully, the rice is only polished to 80%. In this Aiyama version, we have the appearance of a Female Macho. It has the slightly sweet and round taste known from the Aiyama rice variety, but a fresh and sharp finish to balance it out.
The Macho Series are all made using the traditional Kimoto style and ambient yeast from the brewery. Because of the low polishing ratio, it has a rich body and feels wild like a Macho Gorilla. While having deep flavours, it has a remarkably clean and dry finish.
